It should work. A S2000 Reel Touch is not really any different than a regular S2000 except that it has bonus games on the reel touch screen.

What you might have an issue with is getting glass that supports the progressive display.
With a regular S2000 you typically have a pay table on your top box. There are versions of this glass that have the cutaway for the progressive meter to be mounted.

With a vision much of the top box has been cut away for the touch lcd screen, not leaving much real-estate to support the addition of a progressive meter.
At least I have never seen one in the wild.....

With the newer AVP platforms I haven't seen many of the reel touch machines around either. 

You might need to create a separate display holder (box) for the meter which will lead to some more McIver'ing as you will likely need to extend the wiring harness. .
