In most cases the reel glass is generic. Some display one pay line others 5 or 9. There are some games that the reel glass is unique like Tabasco, Munsters, etc.
The number of lines is set by the SB chip as is the number of credits. All have to match SB, glass, and strips. This is why it is preferred to purchase a kit. For example triple lucky sevens is available as a 1 line, 5 line, and 9 line the strips are different for each one of them.  Most games will use the same strips if it's a 2 or 3 credit game, there the difference is the award glass and the SB chip.

Yes, the center piece of glass (called the "reel glass" because it is in front of the spinning reels) is often the same generic glass from game to game and doesn't need to be changed. So it often isn't included in a game kit, you just keep using the one you already have. They are available in case it gets broken or chipped.

But on some games the reel glass is different from the normal generic one and it does get changed, so it depends on the game.

The glass piece that shows how much you win for the winning spins is called the "award glass". The glass at the bottom of the machine is often called the "belly glass" or "lower glass". On some machines the award glass is located at the bottom and the top glass is just a decorative piece of artwork, there was a lot of variety over the years.
