The drive you found, is good enough...not really any need for it to be that big.
To wipe the drive and reformat it, you put in both your eKey7 along with the diagnostic thumbdrive, and power up the machine.
You then get into the diagnostics and perform complete clears of all three parts.
Once completed, you shut down, leave the eKey7 in, put in the OS and power up.
I think that's where you go into setting up the machine.
After that, put back in the eKey7 and install your game along with any security dongles and set the game up the way you want it.

480GB SSD drive???  80GB is more than enough.

Once I install the new HD do I just use the ekey and install the games? or do I need to format the drive

Formatting the drive creates a new file system, which dictates how the computer organizes, stores, and accesses files.
Of course, it also erases anything that was on it but in your case, because it's brand new, it doesn't have anything on it.
